Favorite Eats : Buffalo Chicken Wing Pizza

If your family loves pizza and wings this pizza will hit the spot on so many levels. Being from Upstate New York and attending College in Buffalo we are very familiar with the famous Buffalo Wings.... no, not Buffalo Wild Wings... True New York State Buffalo Wings.

This recipe is from my husband's family and my sister in-law makes it all the time.. it is one of the easiest pizza's to make.... so easy we should probably make the kids make it for us.




Ingredients:

Your favorite Pizza Crust... Check out my favorite here Pizza Crust
You can really use any store bought crust or make your own it's totally up to you... but I think the thinner the crust the better.

We usually make 3-4 8inch size pizzas

-Blue Cheese (a semi chunky variety we like Marie's) - One large jar
-Cooked Chicken breast about a pound chunked or shredded which ever you like
-Buffalo Wing Sauce- this can be any kind you like, homemade, store bought.. whatever. We use Franks Buffalo Wing sauce - to taste
-Mozzarella Cheese - 3-4 cups or how ever much you like!

As you can see the ingredients are really basic and all about how much you want of each.

Directions:

Preheat oven to 450

Make your pizza crust ( be sure to poke holes in the crust so that it doesn't bubble up) and precook, this will ensure the crust is partially cooked before you add the toppings. It will also keep your toppings from burning while you wait for the crust to cook through.

While crust cooks prepare chicken with buffalo sauce - cut or shred chicken to what ever size you like. Mix with Buffalo Sauce until all is coated. Again use as much or as little buffalo sauce as you prefer.

Remove crust from oven let cool a few minutes then begin adding toppings.
1. Spoon blue cheese over entire crust (use as much or as little as you want)
2. Add buffalo chicken, ensure chicken is even spread on pizza, you can play around with how much chicken you want on the pizza. We like a thin layer, think adding pepperoni.
3. Top with mozzarella cheese, enough to cover pizza, again the amount is up to you.

Cook pizza for 10-12 minutes or until cheese is melted and bubbly.

Simple right!?!

This recipe can easily be changed and made to your liking. It is for sure always a hit in our house, all the flavors mix so well together and the crunch of the crust puts it over the top!

Favorite Eats: Teriyaki Grilled Chicken with Veggies


Since I haven't been working (in like forever) I have loved trying out new recipes. I usually follow the recipes I find pretty closely but lately I've been experimenting with different seasonings and spices. But this one I found on Pinterest (of course) is just amazing as is. I always love when I find something new my husband thumbs up and we can "add" to our meal rotation. Don't worry the kids matter too.. but sometimes I make a modified version of the recipe for them.

One other things before I give you this amazing recipe - I have a big family so there are times I have to have more meat or double something, other times the amount in the recipe is just fine as is - I'll let you know if I change or increase anything to feed my family of 6 (yes, I know we have 7 but Parker isn't exactly sitting at the dinner table yet :)

Teriyaki Grilled Chicken with Veggies

Ingredients:

1 1/2 pounds boneless skinless chicken breast

2 1/2 cups chopped broccoli Florets
3 cloves garlic
1 tbsp ginger
1 1/2 cups matchstick carrots
1 medium zucchini

3 tbsp honey
1/2 cup soy sauce, low sodium

1 1/2 cups white or brown rice (Cooked.. or just what ever serving size you need for your family)

black pepper - to taste
3 tbsp brown sugar packed
1 1/2 tbsp cornstarch
 Sesame Seeds - optional

3 1/2 tbsp Olive Oil
1 tbsp rice vinegar
1/2 cup water

Teriyaki Sauce:

In a small sauce pan wisk together soy sauce, 1/2 cup plus 2 tbsp of water, the brown sugar, honey, garlic, ginger, and rice vinegar. Bring to a light boil over medium-high heat. Wisk together cornstarch  with remaining 2 tbsp water, then add to sauce mixture. Reduce heat slightly and allow to boil 1 minute, stirring constantly. Remove from heat and set aside. (If you are tempted I say go ahead and taste it... YUM... just don't burn yourself)

I would start making your rice at this point ;)

Chicken:
Brush both sides of the chicken with 1/12 Tbsp of the olive oil and season with pepper (no salt needed the Teriyaki sauce is plenty salty). Preheat a grill over medium-high heat to about 425-450 degrees. Brush grill grates lightly with oil then grill chicken until center is 160-165 degrees. Remove and let rest 5 minutes then dice into cubes.
..... You can also dice the chicken ahead of time and cook in a pan - I had to do this because I don't have a grill right now... chicken still came out great

Veggies (be careful if you are like me you will be dipping these veggies in the sauce every few minutes to see if they are done... go ahead you know you want to!)

Heat remaining 2 Tbsp of olive oil in a saute pan over medium-high heat. Add zucchini, broccoli, and carrots saute 4-5 minutes until crisp and tender.

Layer rice then top with chicken and veggies add desired amount of teriyaki sauce over top! I found the sauce was pretty thick at this point so just do your best! Add sesame seeds if you like and eat!

Over all this dish was pretty easy to make and not too awfully time consuming which for me automatically gets a thumbs up!
